Garlic chicken and potatoes is an easy weeknight dish that can be prepped ahead of time.
Recipe:
-3 lbs boneless chicken thighs ( you can use bone-in but i prefer boneless for the kids)
- 20 cloves of garlic ( you can use less or more, i think the more the merrier)
- 1/4 cup olive oil
- 1 tsp black pepper
- 1 tsp white pepper
- 1 tsp oregano
-1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp salt
-1 whole lemon zest
- 2 whole lemon squeezed
- 4 medium potatoes
Directions:
- 1 or 2 days ahead prep the chicken thighs add all the garlic and the spices listed with salt and olive oil and marinate for a day in the fridge. This helps the chicken get very well marinated in all the delicious flavors.
The next day, peel and wash the potatoes, then cut into 1/2 inch cylinders. Oil a baking dish, add all the potatoes on the bottom then add all the marinated chicken on top. Give it a toss so that the marinade from the chicken is mixed in with the potatoes.
Preheat the oven to 400 degrees and bake for 60 minutes covered then uncover and bake for another 15 minutes for browning of the chicken. Bon appetit!
